The swordfish is cut into steaks, bled in running water and placed in steel containers filled with water and salt to be cooked. Cooling takes place at room temperature, followed by peeling and removal of the thorns. Placed in glass jars covered in olive oil hermetically sealed under vacuum, ready for the sterilization phase.
It can be a good light second course, or it can be used to make pasta dishes.
