The fish, caught on longlines, is processed by hand while still fresh, cooked in salted water, and left to rest in glass jars to ensure the preservation and enhancement of the unique organoleptic characteristics of this delicate meat.

The fillets are uniform and compact, with a pinkish white colour, and a lower fat content than normal tuna, which makes it truly unique.
On the nose there is a clear citrus sensation, tender and exquisite in the mouth.
