The fish, caught on the hook with longlines, is manually processed fresh, cooked in water and salt, left to rest in glass jars in order to guarantee the maintenance and prominence of the peculiar organoleptic characteristics of this delicate meat.
The fillets are uniform and compact with a pinkish white colour, with a lower fat content than normal tuna which makes it truly unique.
On the nose there is a clear citrus sensation, tender and exquisite in the mouth.
